Pasta Fagioli

1 pound grass fed beef, browned and drained

1/2 red onion, chopped

3 carrots, peeled & chopped

2 celery stalks, sliced

2 cans (14.5 oz) Muir Glen Diced Tomatoes

1 can organic kidney beans, drained and rinsed

1 can organic Cannellini beans, drained and rinsed

4 cups organic beef broth

1 jar pasta sauce (26 ounce)

1 Tbsp hot Sauce or Tabasco

1/2 tsp salt

1/2 tsp pepper

1 cup gluten free or whole grain pasta, dry

  1. Using a large, 6 quart crockpot, add chopped carrots, celery, & onion. Add the drained beans, tomatoes, pasta sauce, beef broth, salt pepper, and hot sauce. Stir in the meat.

  2. Cover and cook for 4 hours on high heat or 8 hours on low heat.

  3. Add uncooked pasta & continue to cook for 30-60 minutes until desired level of tenderness is reached. Sprinkle with parmesan cheese.
