Quinoa, Black Bean, Mango, & Avocado Salad

Makes 8 servings

1  1/2 cups quinoa

2 1/4 cups water

1 red bell pepper, chopped

1/2 cup chopped red onion 

1 mango, peeled, pitted, and cut into pieces

1/2 cup fresh cilantro leave, chopped

1/2 jalapeno chili, finely chopped

1 can black beans, rinsed and drained

5 tablespoons freshly squeezed lemon juice (or lime)

3 tablespoons extra virgin olive oil

4 garlic cloves, minced

1 teaspoon cumin, ground

1 teaspoon chili powder

1/2 teaspoon turmeric, ground

1 avocado, halved, pitted, and thinly sliced

Directions:

1. Prepare quinoa according to package instructions.  Transfer to a large bowl, let cool for 20 minutes.

2. Whisk together the lemon juice, olive oil, garlic, cumin, chili powder, & turmeric in a small bowl or shake in a small jar with a lid. 

3. Mix together quinoa, beans, bell pepper, mango, onion, cilantro, jalapeño, & dressing.  Refrigerate until serving time. Top with avocado slices.
